to provide a background in the science of nutrition that individuals can use as the basis for making de- cisions for dietary planning for themselves or for others in any age group in health or in illness; to show how the principles of nutrition may be inte- grated with the physiologic, cultural, and socio- economic factors in the daily selection of meals; to furnish guidelines for nutrition education, dietary counseling, and community nutrition services.
The concept of dietary balance to maintain or re- store the best possible level of health is emphasized; that is, the diet must furnish sufficient energy and nu- trients to meet the metabolic needs at all stages of the life cycle. On the other hand, the excesses that are be- lieved to be risk factors in chronic disease ranging from dental caries to cardiovascular diseases are to be avoided. The issues and unresolved controversies that concern so many are highlighted in many of the chap- ters, and the reader is provided with information that can help him or her take a responsible position based upon current research.
